Bacon Friday With Friends!

I unexpectedly had some friends over for dinner on Friday night. I got a call saying they were going to be near me and were curious if I wanted to hang out. I didn't have any plans so I told them to come on over! 

None of us really wanted to go out and spend money, so we quickly figured out what we had in our fridges and made a meal out of that! And because bacon is SO delicious, we decided to include it in everything we made - including dessert! And that's how Bacon Friday came about!

Ranch Fries with Bacon Crumbles
Spring Mix Salad with Figs, Goat Cheese and Bacon
Grilled Cheese with Bacon. 
YUM!!!


And for dessert...

We enjoyed Chocolate Covered Bacon!
They picked it up at the fair earlier in the day.
And it was a perfect ending to a bacon filled Friday!

Sunday Night Dinner: Take 30

For my 30th Sunday Night Dinner post, I made something SO tasty and it's something I haven't made in a very long time. In fact, I've never made this exact version either! My friend Alison got to be a taste tester and I think she went home full and happy! 

So what did I make? 

LASAGNA!!!


Kale, Spinach and Zucchini Lasagna Roll Ups to be exact! 
And I served them with a spring mix salad and fresh garlic bread. 


I was very happy with the outcome and will absolutely be making these again in the future. And this time I won't wait as long to make them again! In fact - this would make an excellent dish this Fall and I seriously CANNOT wait for it to get here. C'mon Fall!!!

Note: I used this recipe and used Kale, Spinach and Zucchini instead of the Prosciutto. I'm sure either would be fine, but this was all veggie and still incredibly delicious!

Bulk Baking: Zucchini Walnut Bread

If you didn't realize it from my last bread post... let me tell you again.

I recently started on a bulk bread baking spree and Zucchini Walnut is my latest adventure. I had never made it before, but did a little research and found this recipe.  It sounded soooooo good, so I decided to dive in and went to town making this bread that I'd hope I would love and could add to my recipe collection.

I won't say anymore, but take a look at how I made a TON of delicious bread made out of something as simple as a VEGETABLE!!! Oh and a few other ingredients too!

The Goods:
Shredded Zucchini
Butter
Eggs
Sugar
Flour
Salt
Baking Soda
Vanilla
Cinnamon
Nutmeg
Walnuts

Mix the Sugar, Eggs and Vanilla

Add the zucchini

Mix it all up!

Sprinkle the baking soda on top and mix in.

Gradually add in the dry ingredients. 

Then fold in the walnuts.

Bake according to the recipe


I made these a little while ago and just pulled a loaf out of the freezer today. I can't wait to enjoy it again and what's even better is the fact that I didn't have to do ANYTHING and I still get to enjoy delicious homemade bread!

Oh yeah, I almost forgot, this recipe WILL be part of my collection an will absolutely be made again.

Fresh Garlic Bread

I love Garlic Bread. 

I love it even though it makes me have horrible garlic breath.

I love pretty much any form of garlic bread (even the frozen kind), but the kind I like best involves homemade garlic butter and fresh bread baked that day. The only way it could really get better would be to make the bread myself. I would love to do that and will report back if I do end up doing it one day! :)

Now let me share with you how to make this amazing Garlic Bread.

The Goods:
-French Bread
-Butter
-Fresh Herbs of Your Choice 
(I used Italian Parsley)
-Garlic
-Sea Salt

In Food Processor, pulse butter, garlic, herbs and salt until well combined.

Spread butter mixture over bread.

Bake at 375 degrees for about 10 minutes - until golden and crisp.
