Banana Bread Bunts

I've made banana bread and blogged about it many times before.
You can read about it here, here and yup here too!
But in all the times I've made banana bread,
I had yet to make it into a banana bread bunt!

When I found mini bunt pans earlier this year,
I knew I had to make not only the mini bunts,
but a full sized banana bread bunt too of course!

The Goods:
Butter
Sugar
Eggs
Sour Cream
Flour
Baking Powder
Baking Soda
Salt
Mashed Banana 
Lemon Juice
Chocolate Chips

In a large bowl, combine the flour, baking powder, baking soda and salt.

In another large bowl, cream the butter and sugar together.

Add the eggs and sour cream, mixing until combined.

Add the dry ingredients to the wet ingredients and mix again.

Now mix in the mashed bananas and lemon juice.

Finally, add a bag of chocolate chips and mix one last time!

Spray your bunt pan(s) with baking spray and preheat your oven to 375 degrees.

Fill your mini bunt pans about 3/4 of the way full...

And then fill your regular sized bunt pan with the rest of the dough.

Bake the mini bunts for about 30 minutes - until a toothpick comes out clean!

Cool for about 5 minutes, remove from pans and finish cooling on a wire rack.

The regular sided bunt will take a little longer to bake.
Mine was in right about an hour and turned out perfectly!

As with the mini bunts, cool in the pan for about 5 to 10 minutes,
then remove from pan and finish cooling on a wire rack.



Banana Bread Bunts
(Makes 1 Large and 4 Mini)

6 Tablespoons Butter
2 Cup Sugar
2 Eggs - beaten
1 Cup Sour Cream
4 Cups Flour
4 Teaspoons Baking Powder
2 Teaspoon Baking Soda
1 Teaspoon Salt
1 1/2 Cups Mashed Banana
2 Tablespoons Lemon Juice
2 Cups Chocolate Chips

Baked Donut Monday: Banana Bread with Banana Glaze!

Happy Monday you guys!!!
I'm back again for another Baked Donut Monday post
and today I'm going to tell you about some super tasty
BANANA BREAD BAKED DONUTS!!!

Oh and it gets even better...
They have a banana glaze on them too!!!
HOLY WOW GUYS, HOLY WOW!
These baked donuts just keep getting better and better.

If I wasn't afraid I'd gain a ton of weight,
or maybe if I had a little more free time,
I just might have to make baked donuts more often!!
Any suggestions on flavors that you'd like to see on here?

Let me show you how to make these amazing donuts!

The Goods:
Flour
Sugar
Baking Powder
Salt
Cinnamon
Mashed Banana
Unsalted Butter
Egg
Milk
Vanilla
Powdered Sugar

Combine flour, sugar, baking powder, salt and cinnamon in one bowl.
Whisk together egg, melted butter, milk, vanilla and mashed banana in another.

Add the wet ingredients into the dry ingredients and mix until combined.

Transfer donut batter to a large zipper bag.

Cut off the end of the zipper bag 
and fill your donut pan until 1/2 to 3/4 full.

Bake at 350 degrees for 10 minutes,
until golden brown and dough is set.

Now time to make the banana glaze!
Whisk together the melted butter, milk, 
mashed banana, powdered sugar, salt and cinnamon.
Glaze should form ribbons when it's the right consistency.

Remove donuts from pan and cool on a wire rack.
I placed parchment paper under the rack,
which comes in handy for the next step!

Drizzle banana glaze generously over the cooled donuts
and then let the glaze set completely.

Grab a donut and take a bite to taste test.
Immediately take another bite because it's THAT GOOD!

Package up in cute containers and deliver to your neighbors,
to eliminate all temptation because these donuts are so tasty I'd eat them all!

Banana Bread Donuts 
Adapted from Hungry Couple

For the Donuts:
1 Cup All Purpose Flour
1/4 Cup Sugar
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1/2 Teaspoon Cinnamon
1/2 Cup Ripe Banana, Mashed
2 Tablespoons Unsalted Butter, Melted
1 Egg
1/2 Cup Milk
1 Teaspoon Vanilla

1 Tablespoon Milk
4 Tablespoons Ripe Banana, Mashed
3/4 Cup Powdered Sugar
Dash of Cinnamon

Bulk Baking: Chocolate Chip Banana Bread

I recently decided that I was going to make a bunch of different kinds of breads and freeze most of them to enjoy in the coming months. Not only did I decide to make many different kinds of breads,  I was decided to be a lil crazy and double or even triple the recipes! Yes, I knew I would end up with a heck of a lot of bread, but good thing it freezes very well!

One of the reasons I decided to make bread was the fact that I had (and still have actually) a TON of bananas in my freezer just BEGGING to be used! I couldn't say no, and made three, yes THREE, batches of my Great Grandmother's Banana Bread and as usual, I added some chocolate chips!



This is just the beginning of my bread stockpiling. Send me suggestions on other baked goods I should make in bulk to eat now and freeze for later!

GG's Sour Cream Banana Bread: Revisited!

Yup - I'm posting about my Great Grandmother's Sour Cream Banana Bread AGAAAAAAAAIN, but there's a good reason! 

Recently,  a friend from High School asked me if I had a good Banana Bread recipe. I knew I'd posted about my Banana Bread recipe at least once, but when I went to send her the link I realized I never posted the ingredient list OR the directions! How could I be so dumb? How would anyone be able to make the delicious recipe for themselves if I don't explain how?!?

So - without going on and on about the amazing bread (it really IS amazing - trust me!) - here's how you make the dough to bake into bread loaves OR muffins:

3 Tablespoons Butter - softened
1 Cup Sugar
1 Egg - beaten
1/2 Cup Sour Cream
2 Cups Flour
2 Teaspoons Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
3/4 Cup Banana - Mashed up
1 Tablespoon Lemon Juice

1. Cream butter and sugar with a mixer.
2. Add egg and sour cream beating thoroughly.
3. Add half of the dry ingredients and mix, followed by half the bananas and mix, and then repeat.
4. Add lemon juice and mix.
5. Pour into greased loaf pan(s) or lined muffin pan(s).
6. Bake at 375 for about 50 minutes. (I usually check on it about halfway through).





As you can see from the previous Banana Bread Blog - I add Chocolate Chips almost every time! :) They aren't necessary, but are an added little treat!
