EASY Christmas Goodie Idea - Sinful Red Velvet Cookies!

but while brainstorming Christmas goodies to make,
I thought these would be perfect because of the color,
but also because they're so yummy too!

Please excuse the older photos with boarders,
and keep reading to see how to make these treats!


The Goods:
Red Velvet Cake Mix
Cream Cheese
Egg
Vanilla
Butter
Powdered Sugar

Let butter and cream cheese get soft in a large mixing bowl.

Then cream using a hand mixer.

Add the egg...

And mix that in!

Now add the vanilla...

And mix that in too...

Until it looks like this!

Dump in the whole box of cake mix...

And mix that in!

Oh hello yummy red velvet cream cheese mixture.

Form into walnut sized balls.

And roll each ball in powdered sugar.

Place on a cookie sheet with room for cookie to expand during baking.

Bake at _____ for ________.

Cool on baking sheet for a minute or two.

Remove to wire rack and dust with more powdered sugar.

And of course, take a bite to make sure they taste alright!


Red Velvet Crinkle Cookies Recipe

1 Box Red Velvet Cake Mix
1 8oz. Block Cream Cheese - Room Temp
1/2 Cup Butter - Room Temp
1 Egg
1 Tablespoon Vanilla
Powdered Sugar 

  1. In a large mixing bowl, cream the butter and cream cheese.
  2. Beat in the egg and vanilla until combined.
  3. Add cake mix and mix until fully incorporated.
  4. Cover and refrigerate for at least two hours.
  5. Preheat oven to 350 degrees.
  6. Roll chilled batter into tablespoon sized balls.
  7. Roll balls in powdered sugar and place about two inches apart on a baking sheet.
  8. Bake for 10 to 12 minutes.
  9. Cool completely on a wire rack and then dust with more powdered sugar.

Rainbow Sprinkle Butter Cookies

If you remember my Birthday Cake Donuts post,
you'll know that I LOVE rainbow sprinkles.

And since this is birthday MONTH,
I thought it was only fitting
to do another rainbow sprinkle recipe!!!

So today, I share with you some oh so yummy
BUTTER RAINBOW SPRINKLE COOKIES!!!
The Goods:
All Purpose Flour
Sugar
Butter
Salt
Egg
Vanilla Extract
Rainbow Sprinkles


In a larger bowl, cream the butter, sugar, salt and vanilla.


Add the egg yolk and mix until incorporated.

Add the flour and mix until dough forms.

Shape into a long tube and cover in plastic wrap.

Keep in the fridge for at least 2 hours, if not longer.
You can even freeze, covered more securely, for a few months.

Let dough soften slightly, then slice thinly with a sharp knife.

Add rainbow sprinkles and bake for 15 minutes at 350 degrees.

Let cool (if possible) and then dig in!!! 
These may not look like they're anything special,
but man on man they sure taste amazing.
They're buttery and just melt in your mouth!!! 

But wait...

I only used and baked half the dough.
And saved the other half in the freezer,
then made those for a small NYE get together.
But this time COVERED the cookies in rainbow sprinkles!!!


They tasted the same, but I loved this look so much more!

Rainbow Sprinkle Butter Cookies
Adapted from food.com

8 Ounces Butter
3/4 Cup Sugar
1/4 Teaspoon Salt
1 1/2 Teaspoons Vanilla Extract
1 Egg Yolk
2 Cups All Purpose Flour

  1. In a larger bowl, cream the butter, sugar, salt and vanilla. 
  2. Add the egg yolk and mix until incorporated.
  3. Add the flour and mix until dough forms.
  4. Shape into a long tube and cover in plastic wrap.
  5. Keep in the fridge for at least 2 hours, if not longer. You can even freeze, covered more securely, for a few months.
  6. Let dough soften slightly, then slice thinly with a sharp knife.
  7. Add rainbow sprinkles, then bake for 15 minutes at 350 degrees.

Sinful Devil's Food Cookies

This recipe is almost exactly like my Red Velvet Crinkle Cookies,
except instead of using Red Velvet cake mix, I used Devil's Food cake mix
and came up with another delicious and super simple cookie.

These cookies are so simple to make,
you just have to have a little patience for the dough to chill,
but after that you'll have some yummy cookies to devour.

Let me show ya how simple they really are!


In a large bowl...
cream the cream cheese,
add the butter and cream that too,
then add the egg and mix well,
add the vanilla and mix again,
and FINALLY add the cake mix
and combine until fully incorporated.

Portion out mix and roll into balls of dough.
Roll each ball in powdered sugar and place on a baking sheet,
leaving enough room for each cookie to expand.

Bake at 350 degrees for 10 to 12 minutes.

Remove from baking sheet and cool on wire rack.

Once cooled, dust (or really COVER) with more powdered sugar.


Take a bite and let the chocolate just melt in your mouth.
Yuuuuuuuuuuummmy!

Mini Chocolate Chip Cookies

I realized I have never blogged about my Chocolate Chip Cookie recipe!
I'm finally getting around to sharing that recipe with you guys today, 
but instead of the "normal" size, I made a batch of mini cookies!!!

As I mentioned in this post, the Chocolate Chip Cookie recipe I use 
is the original Tollhouse recipe found on the back of the bag.
The ONLY thing I do differently is bake them a few minutes less. 

The Goods:
Flour
Baking Soda
Salt
Sugar
Brown Sugar
Semi Sweet Chocolate Chips
Macadamia Nuts
Vanilla
Eggs
Unsalted Butter (Not pictured - whoops!)

Measure out and prep all your good before you get started.
This makes the cookie making process a lot faster!

Let butter soften, then beat with mixer.
Add sugar, brown sugar and vanilla then mix.
Add eggs and mix to incorporate completely.
Add the dry ingredients and mix again.

Finally, add in the chocolate chip and mix until combined. 

Preheat oven to 350 degrees.

Now the easy part is done!
The next step isn't exactly "hard",
but does take some time and patience.

Pinch the SMALLEST bit of dough possible,
and space them out on a parchment lined cookie sheet.

To get the right sized cookie, this took some trial and error.
You'll think you need much more dough,
but those "blobs" are about the size of a dime!!!

Bake your cookies for about 5 minutes.
Once they start to turn golden, they're ready!

Cool on the pan for a minute.
Then place on a wire rack to finish cooling.

When I make "normal" sized cookie, I usually get a few dozen...

But with the mini ones I made over 350 cookies.
Yes, you read that right folks!
More than THREE HUNDRED & FIFTY mini cookies!

Now it's time to grab an ice cold glass of milk
and taste test a few (ok, maybe like 10) mini cookies!

And then package up the rest for a cute boy and your coworkers!
Even though there were SO many cookies,
all of them were eaten in less than 24 hours!!!

Mini Chocolate Chip Cookies
2 1/4 Cups All Purpose Flour
1 Teaspoon Baking Soda
1 Teaspoon Salt
3/4 Cup Sugar
3/4 Cup Brown Sugar
1 Teaspoon Vanilla
2 Eggs
2 Sticks Unsalted Butter
1 Bag Semi Sweet Chocolate Chips
  1. Preheat oven to 350 degrees.
  2. Combine flour, baking soda and salt. Set aside 
  3. Let butter soften, then beat it with mixer.
  4. Add sugar, brown sugar and vanilla then mix.
  5. Add eggs and mix to incorporate completely.
  6. Add the dry ingredients and mix again.
  7. Finally, add in the chocolate chip and mix until combined. 
  8. Pinch the SMALLEST bit of dough possible, and space them out on a parchment lined cookie sheet. Make sure to leave enough room for them to expand.

I first made these cookies years ago.
Like probably close to 10 years ago if I'm being honest.
And I totally forgot about them and their deliciousness.


That is until a really good friend's grandma reminded me recently!
I instantly knew I need to make them again 
and of course I had to blog about them too!!

So today, I bring you a very easy and super tasty cookie
that funny enough is made using cake mix!
Let me show you exactly how these babies are made.

The Goods:
Red Velvet Cake Mix

Egg
Vanilla
Butter
Powdered Sugar
