Butter Chicken

I love eating Indian food - going out for it or getting it to go.
Heck - even the frozen Indian food from Trader Joe's is tasty.
So when I saw this Buzzfeed and how simple it looked,
I knew I needed to try to make it myself!
And that is exactly what I did and I'm here to show you.

Sorry - no "The Goods" picture this time
 because I decided to blog about this at the last minute.

Marinate 2 pounds of bite sized pieces of chicken breasts in 
1 teaspoon chili powder, 1/2 teaspoon turmeric, salt and pepper to your liking.
Let sit at least 15 minutes.


Melt two tablespoons of butter in saute pan and brown chicken.


Remove chicken and set aside.

Melt two more tablespoons of butter over medium heat,
then saute 1 1/2 cups diced onions, 3 cloves minced garlic,
3 teaspoons garam masala, 1 tablespoon grated fresh ginger,
1 teaspoon chili powder, 1 teaspoon cumin, 1 teaspoon cayenne,
3 inch cinnamon stick, pinch salt and pepper.

Cook until fragrant - about 8 minutes.

Add (1) 14 ounce can of tomato sauce and simmer.


Add one cup cream...

And one cup water.

Bring back to a simmer

Return the chicken to the pan and simmer covered for 10 to 15 minutes.

Stir in 2 more tablespoons butter and adjust salt and pepper to your liking.

Garnish with cilantro.

And finally serve over a bed of rice.

David's Famous Salsa!

Growing up in Tucson Arizona,
my best friend's dad made some amazing salsa.
I always wondered how he made it,
but he always said there wasn't really a recipe.

Over the years, I wasn't the only one that asked about it,
so somehow a fairly good recipe was put together
and lucky me, I was able to get my hands on it

I was home visiting earlier this year and saw my friend's family.
I hadn't seen her dad in probably 15 years and it was great to catch up.
I asked him permission to share his recipe on my blog,
and since you're reading this, he of course said yes!

So without saying anything more,
let me show you how this yummy salsa is made!

The Goods:
Tomato Sauce
Whole Peeled Tomatoes
Salt
Oregano Leaves
Garlic
Garlic Powder
Green Onions
Cilantro
Dried Chili Tepins
Limes
Red Wine Vinegar

First thing you want to do is get all your ingredients prepped.

Chop up an entire bunch of green onions and set aside.

Mince one to two garlic cloves so you have a full teaspoon.

Chop up one entire bunch of cilantro and set aside.

Slice your limes in half.

In a blender, add ingredients in the following order:
Half the can of whole tomatoes (and juice), 
three quarters of the chopped green onions, 
all of the chopped cilantro, 
juice from the limes, 
red wine vinegar, 
salt, 
a sprinkle of garlic powder, 
minced garlic, 
crushed chili tepins, 
oregano leaves, 
the rest of the whole tomatoes, 
the rest of the green onions 
and last but not least the tomato sauce!!!

Blend well for about a minute. 
And that's it for a batch of David's salsa!

As you can see in the photo above,
this recipe makes quite a bit of salsa!
Knowing that, I've been known to make a batch for myself
and then give a lot of it away to coworkers and friends.

Sometimes I take a little more time and package it up in cute mini mason jars!

David's Famous Salsa
1 (15 oz) Can Tomato Sauce
1 (28 oz) Can Whole Peeled Tomatoes
2 Teaspoons Salt
1/2 Teaspoon Oregano Leaves
1 Teaspoon Garlic, Minced
Sprinkle of Garlic Powder
1 Bunch Green Onions, Chopped
1 Bunch Cilantro, Chopped
1 FULL Teaspoon Dried Chili Tepins, Crushed
3 to 4 Limes
1 Tablespoon Red Wine Vinegar

  1. In a blender, add ingredients in the following order:
    • Half the can of whole tomatoes (and juice)
    • Three quarters of the chopped green onions
    • All of the chopped cilantro
    • Juice from the limes
    • Red wine vinegar
    • Salt
    • Sprinkle of garlic powder
    • Minced garlic
    • Crushed chili tepins
    • Oregano leaves
    • The rest of the can of whole tomatoes
    • The rest of the green onions
    • Last but not least the tomato sauce
  2. Blend well for about a minute. 
  3. Store in airtight jar for about a week or two.

Turkey and Quinoa Stuffed Peppers

One of my friends is always posting pictures of dinners she makes.
They always look so good and make me so hungry!
She recently posted Stuffed Peppers that she made.
They looked amazing and I couldn't help but ask for her recipe.

She didn't follow a recipe, but instead just made it up herself.
I was impressed and couldn't wait to make them!
And now here I am sharing their deliciousness with YOU!!!

The Goods:
Cooked Quinoa
Ground Turkey
Onion
Garlic
Jalapeno
Bell Peppers
Corn
Black Beans
Green Chilis
Tomato Sauce
Taco Seasoning
Cheddar Cheese (Not pictured - oops!)
Saute your onion and garlic until fragrant.
Add chipped jalapeno and ground turkey.
Cook until the ground turkey is browned.

Season with taco seasoning and then add tomato sauce.
Stir to combine with ground turkey mixture.

Add your corn and black beans, then stir again.

Now time for the quinoa!
Add that and stir.

Last, add the green chili and stir one last time.

Prep your peppers by washing, deseeding and cutting them in half.
Then stuff, and I mean STUFF, them with your turkey quinoa mixture.

Spray your covered baking dish with cooking spray.
Add the number of peppers you want to bake and cover with cheese.
I only baked three of the eight I prepared,
but froze the remaining ones to bake sometime soon!

Cover the baking dish and bake for 40 to 50 minutes.

Ta da!
Now time to dig in and enjoy!!!

If you want the peppers to be less crisp, you can do one of two things:
1. Cook a little bit longer 
or 
2. Add 1/2 cup of chicken broth to the dish before baking.

Turkey and Quinoa Stuffed Peppers Recipe
4 to 5 bell peppers
1 1/2 cups cooked quinoa
1 pound ground turkey
1/2 onion - chopped
1 garlic clove - minced
1 jalapeno - minced
1/2 cup black beans
1/2 cup corn
1 can green chilies - diced
7 oz can tomato sauce
1 teaspoon taco seasoning
fresh cilantro
fresh parsley
salt and pepper to taste
cheddar cheese - shredded

  1. Preheat oven to 400.
  2. Sauté onion and garlic until fragrant. 
  3. Add jalapeño and cook one minute.
  4. Add ground turkey and brown.
  5. Season with salt, pepper and taco seasoning.
  6. After five minutes or so, add tomato sauce 
  7. Once cooked, combine in a bowl with quinoa, black beans, corn and green chiles.
  8. Add chopped cilantro and parsley to your liking
  9. Put mixture into peppers. 
  10. Spray a Dutch oven. Put the peppers into a Dutch oven and cover the peppers with cheese. 
  11. Put the lid on and bake 40 to 50 minutes.

Sunday Night Dinner: Take 34

One of my best friends came over for dinner tonight and I made and old favorite - Turkey Sloppy Joe's! I had a craving for them last week so I decided to make them for Sunday Night Dinner and Alison wasn't objecting! 


With the Sloppy Joe's, I made some homemade Sweet Potato Fries that I baked instead of fried. 
We dipped them in ranch with a little spicy seasoning sprinkled on top.


And last but not least, some semi-homemade cole slaw. 
I thought we needed something "green" and this was better than nothing! 


All in all, tonight's dinner was a great Sunday Night dinner and it really didn't take too long to make. 
You should all try making your Sloppy Joe's with ground turkey - it's leaner and still amazingly tasty! :)

Sunday Night Dinner: Take 30

For my 30th Sunday Night Dinner post, I made something SO tasty and it's something I haven't made in a very long time. In fact, I've never made this exact version either! My friend Alison got to be a taste tester and I think she went home full and happy! 

So what did I make? 

LASAGNA!!!


Kale, Spinach and Zucchini Lasagna Roll Ups to be exact! 
And I served them with a spring mix salad and fresh garlic bread. 


I was very happy with the outcome and will absolutely be making these again in the future. And this time I won't wait as long to make them again! In fact - this would make an excellent dish this Fall and I seriously CANNOT wait for it to get here. C'mon Fall!!!

Note: I used this recipe and used Kale, Spinach and Zucchini instead of the Prosciutto. I'm sure either would be fine, but this was all veggie and still incredibly delicious!
