Baked Donut Monday: Maple Bacon Donuts!

Happy Monday you guys!!!
I'm back again for another Baked Donut Monday post
and today I'm going to tell you about some super tasty
MAPLE BACON BAKED DONUTS!!!

When I first came up with the Baked Donut Monday series,
I knew that I'd blogging about Maple Bacon donuts at some point.
Because hello - donuts...and bacon!
And doesn't bacon make everything better???

WOW YOU GUYS!!!
I thought the Toasted Coconut donuts were my favorite,
but I'm thinking I may actually like these a little better.
It's like an entire breakfast in one bite!!

Before I show you how to make these delicious donuts,
I have to confess to a small blogger fail.
I missed a few step by step pictures for this post.
OOPS - sorry!!!

The Goods:
All-Purpose Flour
Brown Sugar
Baking Soda
Baking Powder
Salt
White Vinegar
Milk
Vanilla Extract
Cooked Bacon
Maple Syrup
Maple Extract
Powdered Sugar

Oops - not pictured, but needed too:
Egg
Vegetable Oil

Mix together flour, brown sugar, baking soda, baking powder and salt.

Mix together the egg, vegetable oil, homemade buttermilk* and vanilla extract.

Add the wet ingredients to the dry ingredients and whisk to combine.

Add the cooked, chopped bacon bits and fold into the batter.

Transfer donut batter to a large zipper bag.

Cut off the end of the zipper bag 
and fill your donut pan until 1/2 to 3/4 full.

Bake at 400 degrees for 10 minutes.
Cool in pan for a few minutes.

While the donuts are cooling, make the maple glaze.

Combine maple syrup, vanilla extract, milk, maple extract and powdered sugar.
Whisk until glaze is smooth and forms ribbons when scooped from the bowl. 

Working one at a time, dip each donut into the glaze and garnish with more bacon!

Let the glaze set up completely.

Step back and admire how amazing they look...

And then pick one to devour!!!

Maple Bacon Donuts
Adapted from Broma Bakery

For the Donuts:
1 1/2 Cups All-Purpose Flour
1/3 Cup Brown Sugar
1/2 Teaspoon Baking Powder
1/2 Teaspoon Salt
1 Egg
1/2 Cup Homemade Buttermilk*
1/4 Cup Vegetable Oil
1 Teaspoon Vanilla Extract
4 Strips Bacon - cooked and chopped into tiny pieces

For the Glaze:
3 Tablespoons Maple Syrup
1 Teaspoon Vanilla Extract
2 Tablespoons Milk
1/4 Teaspoon Maple Extract
1 1/2 Cups Powdered Sugar
2 Strips Bacon - cooked and chopped into small pieces

  1. Mix together flour, brown sugar, baking soda, baking powder and salt.
  2. Mix together the egg, vegetable oil, homemade buttermilk* and vanilla extract.

*Homemade Buttermilk is a mixture of Milk and Vinegar. Find more info here!

Bacon and Leek Quiche

Breakfast for dinner is one of my favorites!
I remember loving having it as a kid
and I still do today as an adult!

Because of that, I recently made quiche for dinner!
Quiche is amazing any time of the day,
but I love to have it in the evening with a nice fresh salad.

Yum! I'm getting hungry just thinking about this.
And I may just have to make it again soon!
Until then - let me show you how it's made.

The Goods:
Eggs
Bacon
Leek
Colby Jack Cheese
Pie Crust
Milk
Butter
Salt
Pepper

Dice up your bacon and cook it in a skillet.

Drain a little of the bacon fat from the skillet,
then add your chopped leek and saute.

You can either make your own pie crust,
or be like me and buy the pre-made kind.
Either way - make sure you have pie crust!

Crack 6 eggs, plus 2 more egg whites into a mixing bowl.
Add about a cup of milk and some salt and pepper.

Then mix it up with a fork .

Add your bacon, sauteed leeks and half of your cheese.

And here's where I confess to my blogger fail.
I completely forgot to take a picture of the quiche before baking.
I'm sorry...forgive me?

Anyway - bake your quiche at 375 degrees until fully cooked.
For me that was about 40 minutes, but my oven seems to be extra hot!

Take your quiche out of the oven...

And add the rest of your cheese.
Return the quiche to the oven for a minute or two,
just enough time for the cheese to fully melt!

Remove from the oven and let sit for about 5 minutes before cutting.

Now time to dig in and enjoy with a fresh salad as I previously mentioned!

Bacon and Leek Quiche Recipe
1 Leek
6 Slices Bacon
6 Eggs + 2 Egg Whites
1 Cup Milk
1 Cup Colby Jack Cheese
Pie Crust
Salt
Pepper

  1. Dice your bacon and cook it in a skillet, then set aside.
  2. Clean, slice and saute your leek, then set aside as well. 
  3. Crack eggs into large mixing bowl, then add milk, salt and pepper. Mix with a fork.
  4. Add the bacon, leek and half your cheese to the mixing bowl. Mix with a fork again. 
  5. Bake at 375 degrees for about 40 minutes (may be longer in your oven) until fully set.
  6. Remove from oven, add the remaining cheese and return to the oven for a few minutes - just until cheese melts.
  7. Let sit for about 5 minutes before cutting.

Kansas City FUN with Auntie Mommy!

I've been meaning to post about this for awhile,
but I was pretty busy the last few weeks
 and LIFE kinda just got in the way.

About a month ago, I had the pleasure and privilege
to watch my two adorable nephews for about a week.
My brother, his wife and my niece were headed out of town
and they needed someone to watch the boys.

When they asked me I instantly said "YES!",
and pretty much started planning immediately!

Keep reading so you can hear all about my AMAZING trip to Kansas City!!!

It's me - the person who blogs about a lot of the food she makes,
so you better believe I made some yummy food while I was there!

I took some recipes I have made numerous times, 
but made them a little more "kid friendly" for the boys.

A few of the things we ate were: Baked Mac 'n Cheese and broccoli, 
Fruit Kabobs with Yogurt, Pulled Pork Sliders with Waffle Fries 
and finally Pancakes, Bacon and Fruit for our Breakfast Party!

Now that I've showed you the yummy food, 
let me show you some of the fun we had!!!

First off - look at this guy!
I can't believe he's a Kindergartner now!

Pink is the highest color on his behavior chart,
so I was a proud aunt that day!

Gavin did homework and Logan colored.
And then....

They became SUPERHEROES!!!
Can't get enough of that pose OR the baby feet!

There's not much cuter than this!

Logan and I went on a playdate with a gal I met in Kansas City last year.
We went to Deanna Rose Children's Farmstead in nearby Overland Park,
and then hit up Pig & Finch where the kids won over the chef with their cuteness!

With it being Fall, the leaves were just starting to change.
And Logan LOVED to collect them when walking to the bus.

At Gavin's request, we did Make Your Own Pizza one night for dinner!
And of course one must wear their superhero cape while cooking. 

Be still my heart.
Loved this view so much!

Almost as soon as I was asked to come watch the boys,
I knew I wanted to make a Welcome Home banner with them.

One day when Gavin was at school, Logan and I made a trip to Hobby Lobby.
A few hours later, during Logan's nap, I put the banner all together
and had the boys add their own special touch!

Both boys loved eating their Fruit Kabobs!

After refueling on fruit, we went outside to play with some friends.
Bike riding, sidewalk chalk drawing and then this happened...

A selfie series in front of the garage!!!

And you can't forget the fun we had making foam figures!
Gavin is such a great big brother and was super helpful 
because this project was a little advanced for Logan.

We already had lots of fun, 
but it didn't stop there...

I wanted to do something extra special one day, 
so I decided I'd throw a little Breakfast Party on Saturday.
I stayed up late on Friday to decorate the kitchen
and set out special place settings for both boys.

They didn't know what to think when they woke up,
but soon dug into their little craft packs while I whipped up
a little feast with bacon, pancakes, fruit and orange juice.
Oh and lots of coffee for me!!!

After we got cleaned up from breakfast,
I gave them both a little present from my parents.

Then we kept busy playing with a race track I drew using leftover banner paper.
And yes, Gavin is wearing a Storm Troopers costume! 

When we got up from naps and quiet time,
it was time for more fun so we went outside
and blew bubbles with a giant bubble wand!

They were being extra adorable on the stairs one morning,
so of course I had to document their cuteness.
And man, Logan's got some serious moves!!

Last but not certainly not least, 
Ninja Turtle Gavin out front with the rope swing.

Now that you've read all about the adventures I had with Gavin and Logan
you're probably confused and wondering about the title of this post.
Well - let me tell you!

A few days into me watching them, I woke Logan up from his nap
and instead of calling me Auntie Wobyn like he had been,
he called me Auntie Mommy and gave me the biggest hug!
I thought it was the cutest thing and it melted my heart.

I love those boys more than I can describe
and was honored to have been able to take care of them.

Sunday Night Dinner: Take 35

I'm back with a real quick Sunday Night Dinner post! 

It's been awhile since I've done one of these posts, 
but I'm here now to tell you about this dinner that includes an amazing recipe reminding me of my childhood!


Growing up, I remember having meatloaf on a pretty regular occasion. 
I loved it. I ate it without complaining! That is until I gave up eating beef! 

I don't think I've eaten a bite of meatloaf since then...until today!!!

I made mini turkey meatloaves with a slice of bacon on top. 
I wasn't originally planning on adding the bacon, but I'm real glad I did! 
The meatloaves were super moist and delicious. Very similar to how I remember mom's tasting!

With the meatloaf, I made some carmalized sweet potato rounds. 
They were SO GOOD and I will be blogging about them very soon.

Finally, I finished the meal with a green vegetable - frozen peas. 
Yes folks, I said frozen peas! I actually really like them and think they went with the meal quite well.

All in all, I think tonight's meal was a great Sunday Night Dinner!!!

Thanksgiving 2013

As I mentioned in this post, I wasn't going to be hosting again this year - but instead would be spending the day with some of my family a few hours South of Los Angeles. Even though I wasn't making the whole dinner, I offered to make a thing or two and was assigned an appetizer and a dessert.

And because I'm me, I made one additional little goodie too! 

I knew almost immediately what appetizer I wanted to make, but deciding on a dessert took a little more thought. My amazing brother is the one that gave me the great idea, but I put my own twist on it! 

So what all did I make?!?!

Okay...I'll tell you!!

I made...

Bacon Wrapped Bleu Cheese Stuffed Dates!
YUMMMM! These are SO good and I can never get enough. These little suckers even converted a couple people who weren't fans of bleu cheese or dates!!! They are so easy to make, super tasty and I'd absolutely consider them a success at Thanksgiving this year.

And my brother - he suggested a Pumpkin Cheesecake, which sounded great!

But I like mini/individual treats, so I made...

MINI Pumpkin Cheesecakes!
They had an amazing gingersnap crust and weren't too pumpkin-y. Just right in my opinion.

Now what about that other little treat?

Oh right...

These cute little things...

Peanut Butter Ritz Sandwich and Hersey Kiss Acorns!
A friend showed me a link with them around Halloween and I couldn't resist!! I made a batch for work earlier in the week and they were devoured. I knew then that I had to make some more to take for Thanksgiving!

After I finished getting everything prepped or made, I decided I should take a lil gift for the person hosting this year's Thanksgiving. I kept if festive and made the gift instead of purchased it!

I was originally only going to make one for the host, but I had enough flowers so I made one for my grandma and a close friend too! I think they turned out great and I can totally see myself making these again!
