Baked Donut Monday: Banana Bread with Banana Glaze!

Happy Monday you guys!!!
I'm back again for another Baked Donut Monday post
and today I'm going to tell you about some super tasty
BANANA BREAD BAKED DONUTS!!!

Oh and it gets even better...
They have a banana glaze on them too!!!
HOLY WOW GUYS, HOLY WOW!
These baked donuts just keep getting better and better.

If I wasn't afraid I'd gain a ton of weight,
or maybe if I had a little more free time,
I just might have to make baked donuts more often!!
Any suggestions on flavors that you'd like to see on here?

Let me show you how to make these amazing donuts!

The Goods:
Flour
Sugar
Baking Powder
Salt
Cinnamon
Mashed Banana
Unsalted Butter
Egg
Milk
Vanilla
Powdered Sugar

Combine flour, sugar, baking powder, salt and cinnamon in one bowl.
Whisk together egg, melted butter, milk, vanilla and mashed banana in another.

Add the wet ingredients into the dry ingredients and mix until combined.

Transfer donut batter to a large zipper bag.

Cut off the end of the zipper bag 
and fill your donut pan until 1/2 to 3/4 full.

Bake at 350 degrees for 10 minutes,
until golden brown and dough is set.

Now time to make the banana glaze!
Whisk together the melted butter, milk, 
mashed banana, powdered sugar, salt and cinnamon.
Glaze should form ribbons when it's the right consistency.

Remove donuts from pan and cool on a wire rack.
I placed parchment paper under the rack,
which comes in handy for the next step!

Drizzle banana glaze generously over the cooled donuts
and then let the glaze set completely.

Grab a donut and take a bite to taste test.
Immediately take another bite because it's THAT GOOD!

Package up in cute containers and deliver to your neighbors,
to eliminate all temptation because these donuts are so tasty I'd eat them all!

Banana Bread Donuts 
Adapted from Hungry Couple

For the Donuts:
1 Cup All Purpose Flour
1/4 Cup Sugar
1 Teaspoon Baking Powder
1/2 Teaspoon Salt
1/2 Teaspoon Cinnamon
1/2 Cup Ripe Banana, Mashed
2 Tablespoons Unsalted Butter, Melted
1 Egg
1/2 Cup Milk
1 Teaspoon Vanilla

For the Glaze:
1 Tablespoon Unsalted Butter, Melted
1 Tablespoon Milk
4 Tablespoons Ripe Banana, Mashed
3/4 Cup Powdered Sugar
Dash of Cinnamon

  1. Combine flour, sugar, baking powder, salt and cinnamon in one bowl.
  2. Whisk together egg, melted butter, milk, vanilla and mashed banana in another.

Banana Bread Brownies

With a Browned Butter Frosting!
YUMMMMMMMM

I made these scrumptious treats a few weeks ago,
and there is NO doubt that I will be making them again!
And probably soon!!!

I saw the recipe for these here and thought they sounded so good.
I love banana bread, so how could these be bad?

SPOILER: They weren't!
They were AMAZING!!!

And the best part is that they are so incredibly simple to make.
Take a look at the process below:


The Goods:
Yellow Cake Mix
Vegetable Oil
Eggs
Sour Cream
Bananas
Cinnamon
Pecans
Butter
Powdered Sugar
Vanilla
Milk

Mix up the first part of the batter.

Add the bananas, cinnamon and pecans.

Pour into greased 9x13 pan and cook for about 25 minutes.

While baking, make the brown butter frosting!

 Done baking and before and after frosting is added.

The finished product.

Like I said before, these were amazing!
My favorite part by far has to be the incredibly tasty brown butter frosting
Yum, yum, yum!!!

Dairy Free Banana Bread

I haven't made goodies for my co-workers in awhile, and with Halloween coming up I knew I wanted to make some kind of bread/muffin. I purchased some adorable mini muffin liners awhile ago and really wanted to put them to use!

I had TONS of bananas in my freezer just waiting to be turned into delicious banana bread or muffins so I quickly knew I'd be making banana bread. I've made banana bread so many times I've lost count - but I wanted to switch it up and try to make it dairy free so my friend Matt at work could enjoy it too! 

After searching online for awhile, I decided to just use my GG's recipe and replaced the butter with oil and the sour cream with apple sauce. Seemed easy enough and I was just hoping for the best!

 The Goods
3 Tablespoons Oil
1 Cup Sugar
1 Egg - beaten
1/2 Cup Applesauce
(*bonus points if homemade!)
2 Cups Flour
2 Teaspoons Baking Powder
1 Teaspoon Baking Soda
1/2 Teaspoon Salt
3/4 Cup Banana - Mashed up
1 Tablespoon Lemon Juice

Soooooo were my hopes too high? 

Absolutely not! And in fact - I can't even tell the difference between these one and the one's I've been making with butter and sour cream all these years! 

Here are just some of the cute lil gems I made to take to the office tomorrow.

And because I made a TRIPLE batch - I made some mini loaves too!!

Make the regular, make the diary free kind, heck - make BOTH, but make sure you make ONE of these soon!!!

Banana Nut Pound Cake

I grew up eating my mom's homemade banana bread. I've made that same banana bread - usually with the addition of chocolate chips - numerous times. I've made it into muffins and little mini loaves a few times too! I blogged about it here,  here, here and a few other places too!

If you couldn't tell...I'm a BIG fan of Banana Bread! But this post isn't about banana bread, it's about something equally as tasty, but a little different! 

I was very excited when I ran across a recipe for Banana Nut Pound Cake while looking at a Better Homes and Gardens a few months ago. I instantly ripped the recipe out and told myself I needed to make it soon! 

I saved the recipe for awhile, and then finally made it out of the blue on a weekend I didn't have much going on. Confession - I made this MONTHS ago, but am just now getting around to posting about it...sorry, I've been a lil busy!

I think I've rambled enough at this point, so take a look at the pound cake making process, folks. 

The Goods:
flour
baking powder
cream cheese
butter
sugar
eggs
bananas
milk
vanilla
chopped pecans
powdered sugar

The original recipe - or inspiration! 

Beat the Cream Cheese and Butter

Add sugar and mix until light and fluffy.

Add the eggs, one at a time...

Mixing in between each addition. 

Egg 2...

Mix again.

Egg 3...

Mix again.

Final egg! 

And done mixing!!!

Mashed bananas, milk and vanilla mixture.

Add some of the flour mixture:
flour, baking powder and salt.

And mix that in!

Add some of the banana mixture.

Now mix that in too!

Alternatively add the rest of the flour and banana mixtures. 

Until you end up with something like this!

Lastly, add the chopped pecans!

 Pour mixture into a greased bundt pan.

Bake at 325 degrees for 70 to 85 minutes.

Cool in pan for 10 minutes. 

Remove from pan and once fully cool, sprinkle with powdered sugar.

Bulk Baking: Chocolate Chip Banana Bread

I recently decided that I was going to make a bunch of different kinds of breads and freeze most of them to enjoy in the coming months. Not only did I decide to make many different kinds of breads,  I was decided to be a lil crazy and double or even triple the recipes! Yes, I knew I would end up with a heck of a lot of bread, but good thing it freezes very well!

One of the reasons I decided to make bread was the fact that I had (and still have actually) a TON of bananas in my freezer just BEGGING to be used! I couldn't say no, and made three, yes THREE, batches of my Great Grandmother's Banana Bread and as usual, I added some chocolate chips!



This is just the beginning of my bread stockpiling. Send me suggestions on other baked goods I should make in bulk to eat now and freeze for later!
