Sunday Night Dinner: Take 6!

Another Sunday...Another Sunday Night Dinner!

Like I do almost every Sunday night, I made a delicious dinner tonight and made sure there were leftovers to have this week for lunch! It wouldn't be Sunday without the dinner and the week wouldn't feel right without having leftovers at least once day for lunch.

This week I searched online for new chicken recipes. I found many, but in the end decided on a tasty lemon chicken with herbs from my garden! I've said it before and I'll say it again - I LOVE having so many fresh herbs to use right on my balcony.

I made whipped red potatoes and steamed broccoli to go with the chicken. I can't wait to eat some of the fluffy buttery creamy potatoes later! 

Mmmm!

The chicken recipe is a keeper and will be made again without a doubt!

Sprinkles Cupcake Made by ME!!!

At my work's holiday party last year, we all got a Sprinkles Cupcake Mix. We got to pick which flavor we wanted and I decided on Red Velvet. They taste so so so good and I wanted to see if I could recreate the amazingness!


I know, the holidays are months ago. I should have made them by now! I'm a horrible person, I know. 

Truth be told - I forgot I had them for awhile and rediscovered them about a month ago. I just hadn't really gotten around to making them because I was too busy with Cake Balls, Mississippi Mud Bars, Oh and Thin Mint Ice Cream too!

But now... now I have time for the cupcakes!

The idea to make them came to me on Saturday night and I got all the ingredients at the grocery store on Sunday. 

Putting together the mix took a little bit more work than your average store bought cake mike, but it was still a piece of cake! (Haha!!!) The frosting recipe made way more than enough, so I ended up using the leftovers for something else. You'll read about it soon!

While mine don't look exactly like ones you'd buy at a Sprinkles store, they DID taste amazing! 

Would I make them again?

Maybe... but only if I were given the mix again. I'd like to try another flavor too.

New Additions In The Garden!

Last week we had really strong winds in Southern California and my poor balcony took the beating! 

When I saw that the wind was picking up, I moved a few plants off the stucco ledge to be on the safe side. It's a good thing I did too because the wind not only destroyed the material I was using to cover the openings in the railing, but it knocked over my completely full storage unit too! Bad wind, bad! That night, I was NOT a fan of the wind!

My radishes took a little hit, but in the end most of them made it without being damaged too much. 


Since I have two wonderful furry friends, I can't keep the balcony railings wide open. 

After a lot of thought, advice and online research, I ended up purchasing Hardware Cloth from Home Depot and used wire to secure it. It isn't nearly as private, but I like it and think the plants will end up getting more sun.



The cats really like it too! They can see so much more and love people watching every chance they can get.





In addition to the Hardware Cloth, I got a few other goodies while on my shopping trip. I'd originally planned to go to Sperling Nursery to get the rest of my "crops", but the wind on Monday changed my plans. Since there were plants at Home Depot, I decided to kill two birds with one stone! (No - not really... C'mon people!)

I came home with...

A new Cherry Tomato Plant for my Topsy Turvey Tomato Planter!!! I didn't plant it in the planter yet, but keep your eye out because I'm doing it soon. 

A Jalapeno Plant. Last year's did SO well that I couldn't resist doing it again. The memories of homemade Pico De Gallo and Bacon Wrapped Jalapeno Poppers helped me make my decision! :)


A Basil Plant. Similar to the Jalapeno Plant, and Tomato Plant too, my Basil last year was a superstar. It produced so much that I couldn't use it and give it away fast enough! It's a lil sucker right now, but if it's anything like last year's plant, it'll grow like crazy.


Not only did I get food producing plants, I got a few flowers too! The ones I planted a few weeks ago aren't growing fast enough and I wanted some beautiful flowers!

My what?!?! Yeah - I know. I'd never heard of them, but maybe I live under a rock... Anyway, when I was getting out of my car I saw a lady with some in her cart and thought the flower was so interesting. When I saw how cheap they were and this beautiful orangy color, I couldn't resist! 

Enough about the new stuff. As exciting as they are, I can't forget about some of the old favorites. Some of them have been around since LAST Spring. Some of the non food producing ones have been around for a few years!

I'll start with my pride and joy - my key lime tree.


While it has lots of flowers and mini limes, it's a Winter bearing fruit tree, so I don't think I'll get anything usable for about a year.


I mentioned last week that multiple Garlic had sprouted, but now they are ALL (I planted 10 cloves) growing like crazy. The sprouts are about six inches tall and very green. They get bigger every day.


I was very worried about my Shallots.  I planted then the same day I planted the Garlic and I hadn't seen anything.


It didn't make sense to me and I was getting really disappointed until I discovered a tiny little sprout on Saturday. I noticed another one this morning while enjoying the cool March day.


And the herbs. I can't forget them! They're all so useful and I'm so happy I have them fresh on my balcony.

Sunday Night Dinner: Take 5!

It was Mexican food for dinner this Sunday night!

Coming from Tucson I LOVE Mexican food. Even though Los Angeles is still close to Mexico, Tucson's Mexican food is still #1 in my book.

I started making my own Mexican food and I don't think it's half bad. It's pretty tasty to be honest!

I've made multiple different things, and tonight was Enchiladas!

I made both chicken and cheese enchilada with spanish rice and black beans on the side.


I've tried a couple difference spanish rice recipes in the past. While they've all been tasty, none have been on par with a really good Mexican restaurant in Tucson.  

The verdict on tonight's spanish rice...


I'll start by saying it wasn't like you'd find in South Tucson, but it was by far the best I've made!

I will absolutly be keeping this recipe and making it again. Next time I'll add just a tad more water or chicken broth to make sure it's fully cooked. Tonight was just a tad under done, but with that said, it was still amazing!!!

New Beginnings in My Garden!

I know I haven't posted about my garden in a few weeks, but I've had good reason for waiting!

My garden is currently in a ... transitional phase! I recently planted new "crops" and flowers and plan to add even more soon!

Yes, there are the herbs that have been there for awhile, and the awesome lime tree, but other than that it was must soil. How fun could it really be to look at pictures of soil? Not fun - that's why I spared you all the boringness! :)

While I'm speaking of the old favorites... here they are!

Still so exciting. 
I can't wait to see if I'll already get fruit this year.

But this week - things got much more interesting!

When I came home from work on Thursday, I noticed that the radishes had sprouted and there were so many! I knew it was time to thin them and went to work on Saturday morning.

And equally exciting - I have eight, yes EIGHT! garlic sprouts coming up from the soil. I couldn't believe it and counted twice. Unfortunately they don't photograph well, so you'll have to just take my word for it! :) You'll see them soon, promise. 

Sadly, the shallots aren't so exciting. In fact, I don't see any signs of life coming from where I planted them 2 weeks ago. Soon I hope, soon!

And sadly, none of the flowers I've planted have really sprouted yet either. I planed Dahlia tubers (a first for me!), Snap Dragon seeds and California Poppy seeds. I can't wait for the beauty and the amazing smells.



Pear Pizza With Pocket!

Who is Pocket you all may be wondering? Some of you know, and some of you don't, but Pocket is another name I have for one of my closest friends. You may also know her as Robin. No, I'm not talking about me... I'm talking about my friend Robin! :)

I went over to Robin's house on Saturday to hang out, see her new digs and make some tasty pizza!

Earlier in the week we'd decided to make a Pear Gorgonzola Pizza similar to one you can get at CPK

We didn't use walnuts, which I will do next time I make it, and we used more Provolone cheese than called for. It was super cheesy, so that may be cut down in the future!

Here's the whole process!

Flour dough and let it sit for 20 minutes. 
I was impatient and couldn't wait more than 15 minutes! :)

Stttttttttttttretch the dough out to cover the pan you're using.
I've used rectangle and round - I think round turns out better.

The recipe we used called for 4 slices of Provoline...
We used...7!

Next came sliced pear.
We ate some while waiting for the dough, 
and I wish we hadn't eaten so much!

Now the Gorgonzola crumbles!

Spring Mix tossed with more Gorgonzola and Balsamic Vinagrette placed on top.

Fun With Pillsbury Crescent Rolls!

The other night a friend and myself were craving something sweet and I didn't really have anything around and I didn't want to make a box of brownies, so I made...

Cinnamon Rolls!

I bet you thought I was going to say some kind of sweet croissant. Didn't you? It wouldn't be a bad idea...but that's not where my taste-buds were leading me.  

Anyway... a little while ago I had some Pillsbury Crescent Rolls that I needed to use up before the expiration date, and with the help of Google, I found this super tasty treat

They are so easy to make and are some of the best cinnamon rolls I've ever tasted. Even after sitting in a sealed plastic container overnight!

One roll of crescent rolls - unrolled and covered with a mixture of:
sugar, brown sugar, cinnamon and butter. 
You can add nuts too, but I didn't.

Covered by another roll of crescent rolls.

Cut and rolled into eight rolls of pure heaven!
